Savannah & Tony here. We are completely floored that a year after our first ever popup, you have supported us enough that we need to move into our own space to meet the demand! YOU ARE AMAZING!

Taking this next step will allow us to increase our bread capacity from baking 12 loaves at a time to 80! With our own space, we’ll be able to launch a coffee and pastry program, bring you bread every single week, and continue to serve you the sandwiches you’ve grown to love with our house-smoked meats. With a full-retail concept, we’ll also be able to support a staff which means you’ll be helping to create jobs in Fort Collins.

So what is a Caupona?
A Caupona was the name of a restaurant in ancient Rome where anyone could gather and get a bite to eat. Caupona’s were typically run by women (And so are we! We are 50% woman-owned and operated).
Today, we are a bakery and smokery. Savannah makes 18-hour naturally leavened sourdough bread (browse our selection here!) along with baguettes, wheat, and rye loaves. Tony runs the smokery, where he gets to live out his pyromaniac fantasies, while delivering you amazing smoked meats. We source as much meat and produce and from the local farms as we can. (Shoutout to Raisin Roots farms who let us use their farm stand for bread pickups the entire first year)
As we grow, we plan to add on gluten-free sourdough bread and offer more plant-based options (we even got Tony excited about Tofu Burt Ends!). We love this business because it’s brought us together with so many of the amazing people in this community and has allowed us to foster friendships and feed people. Who could ask for more?
